Nailed It!

I have never made chicken wild rice soup, but it turned out tasting so delicious that it will definitely be a new staple. The kids even liked it! The recipe has over 3,000 reviews and it was 5 stars so I figured I couldn’t go wrong!

I grabbed some homemade chicken broth I had in a glass container in the freezer and discovered it had cracked all the way around 😟

Luckily, I had a leftover Costco chicken that I was planning to use the meat from for the soup, so I threw it in the instant pot and made some broth (takes about an hour).


I added the cup of wild rice and 2 quarts (8 cups) of broth and 2 cups of water. It simmered for about 30 minutes.

I added chicken and let it softly boil for another 10-15 minutes



I added the cup of cream which gave it the perfect color and creamy texture!


I will definitely make this again. We don’t cook with onions and I didn’t have garlic cloves so I used powder. I’m sure the flavor is even richer with those added!

I’m trying to instill a love of cooking into my 9 yr old too because I don’t enjoy cooking. I have 5 kids so maybe eventually they can each make one supper a week! 😄
