Nailed it

- 6 slices bacon
- 1 small onion, chopped (I omitted because we don’t use onions)
- 1 garlic clove, minced (I used jarred minced garlic in water)
- 1 tablespoon butter
- 2 tablespoons flour
- 1 cup chicken broth
- 1 cup milk
- 6 ounces cream cheese softened, and cut into 1-inch pieces
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 3 jalapenos, 2 diced and 1 sliced (I used jarred jalapenos)
- 2 1/2 cups cooked, shredded chicken
- 8 ounces penne pasta, cooked (I used ziti)
This was a delicious, creamy, cheesy mac and cheese! I had all of the ingredients on hand so I decided to give it a try! I used sliced jalapenos from a jar. We didn’t do a lot because we can’t handle too much spice. I didn’t put any in the pan for the kids.
I cut them up pretty small. I might use a few more next time and maybe even pour a little of the juice in there.
I had about 5 pieces of bacon to crumble from the day before. Next time I will use a little more.
The kids liked their spice free pan a lot. They weren’t too wild about the leftovers. It was a little dried out and not as flavorful.
